Though I love making corned beef from scratch, the brining takes so long that I don't do it often. But pre-brined, raw corned beef from the grocery is FANTASTIC for SV. It's also good if you cook, chill, unbag, coat in black pepper and coriander and retherm on the smoker for pastrami. Anyway, that photo's got me craving corned beef. Good work! And your forum name made me laugh out loud!

I had some that I had already done and SV'd in my freezer and this made me want it. Had it for dinner tonight and it was wonderful. Ruben's for lunch tomorrow!
