For this sauce, I pan roasted the mushrooms in olive oil and butter with thyme and garlic. Once I got the color I wanted, I deglazed with some chicken stock. When that liquid was mostly cooked down, I added about a Tbs of Dijon and mixed that around. Then I extended that with some heavy cream to finish.
If you want a stronger mustard flavor, you can just cut 2 Tbs with a tsp of water in a small pot.
