Butcher appreciation.

Totally have a new appreciation for all the butchers out there after having to breakdown an entire pork ribs.
Result: 2 racks of ribs, 2 skirts and some bones with meat for broth.

How did you learn to break them down, was there a particular resource (book, video, etc.) you used?

Didn't really follow anything. Looked at it, touched it all around to feel where the bones are and just start cutting. The trick is to find and cut at the joints. Much easier that way. (CS did a video about it using a lamb leg. Same concept) Gpod luck and have fun. Cheers!
