Awesome. I find that I need to bake once or twice a month or I loose the fine points. It's almost been a month since I baked bread. Thanks for giving me the motivation. @Nancy_Byrd_47779 thanks for the tips. Have you seen this website? @Gabriele_Di_Cerbo_40805 there are some more ideas and recipes. Most of her courses are on YouTube.

As promised, here's the ciabatta I baked off yesterday. Started last week by making a biga (using whey as the liquid instead of water). A portion of that went into the dough on Friday where it's been until yesterday (Monday). We had a couple slices each grilled with a bit of olive oil with dinner.....

yes, home for me is in Rome. I grew up with ciabatta sandwiches. that sounds like a great idea!
