Ground elk

A friend of mine who wild sources all his protein recently gave me ground elk. Looking for ideas. Elk burgers are an obvious choice, but I know the great minds on this forum can come up with something better.

Elk summer sausage is very good.

Big steaming bowl of chili! Elk is fairly lean so you might have to add a bit of ground pork...but how about a batch of polpette (Italian meatballs).

ok. Now I'm hungry...

Thanks! I don't think I have enough for sausage, but the Italian meatballs sound intriguing.

The secret in the meatballs is to soak some couple day old bread in milk and once hydrated, us that in the mix along with some ricotta, parsley and parm reg. And be prepared to have to clean your stove afterwards because the best way (IMHO) to cook them is stovetop in a bit of olive oil.
