Hi Guys,
I've been using citric acid, ascorbic acid for their antioxidants properties; but these guys are water soluble. And there exist some lipid soluble antioxidants as well.
I would assume these lipid soluble ones would help more in working with unsaturated fats. What do you think?
Do you know any food safe lipid soluble antioxidants and how to use/extract them? I know carotene and there are already some recipes on working with carrots and oils to extract the carotene.
Any more ideas?
