Turkey roulade - no activa RM

Hi!

I'm in a pickle, i was planing on doing a CS turkey roulade this Sunday for Thanksgiving. I realised too late that i ran out of Meat glue. I know i could do the roulade old school with twine etc, but it may unroll when i cut it. Does anyone know a good substitut for meat glue? Chicken mouse? Also if anyone knows where to buy Activa RM in Vancouver BC (gourmet warehouse ran out too) that would be amazing or if someone in Vancouver has some and they are willing to part with some...

I've done a roulade, with a whole boned out turkey...no activa. It was stuffed with fois and black truffle, rolled, tied, and roasted. It held together just fine (by the way, probably the best turkey I've ever had). I think if you tie it carefully, sous vide, and finish in oven or stove top (basting, of course), it will hold together pretty well.

Do those work for that purpose? They seem to mostly turn things to mush in my experience.

I was doing them like that before and they are great but it's true that I like the nice perfect slice that Activa provides. But hey, it's good to go old school from time to time.

If used in small amounts it works in a pinch. Have only done it once or twice and limited cook times. I haven't done lamb breast or shoulders but for chicken breast from tabs worked.
