I went to one of these cooking at a friends house. At the end the put on fire gloves and ran the skin side back and forth through the flame. The sling was burgundy and crispy. The used poultry shears to cu it all in to potato chip size pieces and passed them around among the gust before we devoured the pork. OMG.
