Cooking ahead for the week and precooking some roasted veg works well. So I had some steak with Roasted Veg for dinner. Simple, delicious. A nice rainy meal here in the Boston area.

Thank you. Much appreciated. Normally I would roast carrots and parsnips and the like whole, and portion after. But I find the slow roasting method more conducive to whole carrots etc. I find about 1.5" portions of all my veg creates a similar color (and flavor) to what turned out this time. We hear it all the time "cut the veg etc to similar sizes). This is a good example as to how well that can really work.
