Chalk Hill Chardonnay....Paella w/ chorizo, mussels, shrimp, scallops, calamari, octopus, cod and lobster tails....I pressure cooked the octopus in water, white wine, sriracha, garlic, onion and something else (It was getting late)..then used the "juice" for the rice w/ some saffron more onions, garlic and the chorizo.....
