Research on sharing culinary knowledge

Hi Everyone,

My name is Daan and already for over 10 years my big passion in life is cooking and the culinairy industry. Currently I am doing a master and I am researching a topic for my thesis. I am intresten in the topic of sharing culinary knowledge. I personally experience that a lot of really in-depth knowledge and cooking techniques are difficult to find on the web. In-dept knowledge about ingredients, techniques and preparations, etc. are still mainly available for the lucky few who have a culinary degree and/or work in a michelin star restaurant. Websites such as chef steps are a great help to enthusiastic home cooks who want to improve their skills and knowledge, but so far I havent really discovered another online platform that truly shows in-depth cooking techniques straight out of the kitchen.

I am therefore doing a small initial research to see if others experience this frustration as well. Please share your ideas about this, and if you have tips for other culinary websites that helped you improve your topic, remarks etc.

Glad you like it. If you learn something, please post back. Maybe a bullet list of actions / tips, things that people could use in day-to-day cooking. I wish I had the time to study that material.

There's an old Ben Franklin quote: "Beer is proof that God loves us."

To which I say, 24 hours in a day proves there is no God.

A quick follow up question: Do you guys regularly check the web to learn new cooking techniques? And do you feel that you find these easily? If you have any sites that you check from time to time Davo, I would be very interested in knowing them as well. Cheers

Quick follow up: unfortunately it's not the kind of course that lends itself to a list of key outcomes for cooks. Rather, it's an overview of what cooking is from a scientific perspective. The good news is, it's extremely accessible and much of the content consists of short videos - not unlike CS. Recommend bookmarking it for when you have time.

Hi Daan, for standard techniques like how to fillet a fish or similar, it's straight to YouTube. Particularly as tons of culinary schools make short videos available, let alone amateurs. If it's a more technical question, nothing I know of online is as useful or comprehensive as Modernist Cuisine & On Food and Cooking, so I hit the books first. If I knew of a really great online resource that was like Wikipedia for cooking, I'd probably use it. As it turns out, there kind of is (Cookipedia), but for me at least it's just not really useful or inspiring.

Dear Davo, Thanks for your reply. Really helpful information. I also found: http://www.greatbritishchefs.com/ great source for recipies. I am still raping my head around how I can bring culinary art techniques and information in an innovative way. There is so much written about the subject but a lot of people lack the time to really read the books and explore one theme in-depth. If there is anything that comes to mind or that you find inspiring please let me know. I will keep you updated about the project if you like. Cheers, Daan
