Overnight French Toast

Hello! I recently saw a brunch menu that offered overnight french toast. Any idea how they're doing something like that? It looks killer!

I can only gander a guess but it might be how I do pain perdu....make the custard the day before and add the brioche, cover and let sit in the fridge overnight. The bread soaks up the egg mixture very nicely and is ready for cooking off in the morning.

Well that makes way more sense than what I was thinking. I thought they were cooking it overnight in the oven and I was completely perplexed as to how it didn't dry out.

I had one at Degustation in NYC. It's based on a spanish Torrijas recipe. They were actually bruleing the toast as well. It was amazing.
