Steak, it's what's for dinner

I almost never eat steak but all the cool kids on the playground tell me that's what they use their circulator for. So I'm giving it a shot!
I need better crust.

It looks great. You could do a pre-sear, I find it helpful. I put a cast iron pan in the oven when I start cooking my steak at 400° F . It will give you a good quick sear.

The ultimate way of getting a sear in my opinion is this: fill a chimney with charcoal and place it in a kettle Weber on the very edge of the bottom grate, at the circumference. Close the bottom airflow vents. Take yourself a small weedblower, and direct it downwards on the opposite end of the kettle, so the air flows downwards around the inside of the kettle, and meets the chimney from the bottom up. It will be like a jet engine is in your back yard. 20 seconds for a sear, with no presear required.

I also recommend a pre sear. I find its easier to refresh the pre sear once it's finished cooking, than searing it outright once it's finished. There's also less of an impact on the overall doneness of the meat, because it takes less time to refresh the sear.

I also find using a MAP gas blowtorch deepens the final sear without much risk of overcooking the interior. That's if you don't use a presear. With a presear I find it's not necessary.

I get my gas grill as hot as H-ll and use a cast iron grill to sear.
However if I'm not feeling lazy I use charcoal. I think charcoal fire is better than gas, it's much hotter.

I seem to remember Alton Brown did something similar with a hairdryer. My leaf blower would definitely be a jet engine! Thanks for the reminder though.
