Rocher help

I've been trying to get the technique down. I initially tried to practice with whipped cream but the cream kind of collapsed and wouldn't 'roll

So I bought a tub of cheap ice cream to play with. I still have a little trouble with this.

In the first video you'll see that I have a little trouble with the transition point where you finish pushing the ice cream away and start pulling towards you, the ice cream at the base of the spoon doesn't seem to get caught in the spoon and thus the base doesn't look pointed. I also have trouble at the point where you pick the quenelle off, it seems to want to stick and leave a tail

In the second video you'll see a problem that I face a lot, that the ice cream doesn't 'roll when you pull the spoon towards you, I'm not sure what the problem is, spoon not hot enough?

I think you are going to want to take a deeper swipe with the spoon on the first pass. The way I think of it is it needs to fold over itself in order to create a nice tail so if the first scoop is too shallow then there isn't enough in the spoon to fold over. If you watch grant's video he digs pretty deep into the mix before maneuvering

Watch the rocher video again...and again, and again. Hopefully you'll see it more clearly. There's a distinct difference between how he does it, and how you're trying to do it. Separately, back when I was looking for quenelle videos on youtube...I found only one video not from chefsteps that shows it correctly....It's hard to understand at first, but trust me, once you get it you won't be able to unsee it.

I'd just tell you straight up, and perhaps someone else will, but I think there are certain things that are best discovered rather than told.

Also, your ice cream seems soft and has a bit too much overrun...makes it more of a challenge (not impossible of course, just more challenging)

@Lennard — Soft Crisco (semi-solid vegetable fat) is really good for sitting and practicing the technique while watching TV.

Your spoon is way too flat. And @Ren is correct, you need to dig in deep, a spoon deep.

@Lennard, definitely getting there. If you get a bit of ice cream hanging on the edge, you can usually wipe that away and drop the rocher so that the seam is on the bottom.
