Made homemade Wonton soup this weekend. Inspired in part by J. Kenji López-Alt.
Made 59 of these beauties. We ate 10 and I bagged and froze the rest.

thanks guys. The broth is made with Pork and chicken bones, and dried shrimps, with ginger, scallions , cabbage and yellow chives.
the stuffing is Minced pork, prawns, ginger, soy sauce, sesame oil, chives.

For chicken stock, I use chicken feet. They have SO much collagen that getting that nice chicken 'jello' result is a snap. And they are usually dirt cheap!
The only problem is in having to look at the feet as they slowly cook...

Looks yummy! I do that too. For this application, I wanted more chicken flavour so I played it like a chicken soup. My Asian market (T&T) sells stewing hen, that's what I used, the gelatin came from the pig's trotters. That said, I was a bit disappointed with the porky flavour - Not strong enough - Next time I'll pump it up by adding pork neck. Also, I followed Kenji's recipe adding the shells from the prawns, but I quickly decided to remove them as it started to taste too much like a shellfish stock.
