My grandfather has been making sushi for years and is looking for anew advanced cookbook to see if he can challenge his skills and learning more advanced methods. Does anyone have recommendations for advanced sushi cookbooks?

Part of me wants to be snarky. If he wants to get better at making sushi he should spend the next ten years making only rice.
I don't really cook sushi so take this with a splash os shouyu, he might not want to get a book but rather spend time talking to his fish monger and learn about fish, what's fresh that day, what's seasonal, methods of preparation, different cuts etc. There's a scene in Jiro Dreams of Sushi where he basically says, " I get all yet fame, but the real heroes are my suppliers, without them I I wouldn't exist."
I'm not sure his technique, but he can work on his butchering skills. Break down a whole fish, practice making dashi and other things with the leftover parts.

Youtube videos by Tokyogastronomy are good inspiration. How many things can be done to one fish? Many!
