Finally did my first sous vide cook!

Decided to do a steak (basic, I know). Got a 1.5 inch thick ribeye from the local butcher and preseared it.

Finished with butter, thyme, and garlic. Also tried out a new lens and some DIY softboxes I built for food photography. Here it is inside that setup:

Had a bit of trouble getting the crust I wanted but turned out pretty decent overall.

Really enjoyed this first experience, looking forward to trying out more recipes and posting photos!

Did you try off your steak before putting it in the pan? Further, how hot did you have your pan, and what kind of oil were you post searing with? How much of a crust did you develop prior to cooking it? And, I get the herbs and garlic, but what is the purpose of the greens in the pan? Where you trying to sear your steak with those in the pan at the time?

I had my stove on high, but not power boil (the highest setting) as things tend to burn at that setting. I cooked the steak in the cast iron both pre and post, and basted it in butter during the post-sear process. Used a mixture of canola and olive oil during sous-vide in the bag, and used canola oil + butter during post sear.

I didn't develop a lot of crust prior to cooking it because I was a bit worried about overcooking. I probably should have just gone very aggressive with that step.

The greens were roasted in a sheet pan and added to the cast iron at the last minute for the shoot — really just to add some color and fill in the space (for the photography, and delicious after).

No, I didn't. I had thought about it but in the video, Grant seems to just slide it into the pan moist. I've watched friends do it and they always dry it, so I'll probably try that next time. Trying to get an even brown crust instead of a spotty one.
