Sous vide steak and doneness

I was curious what do do if you have want to have a dinner party and every guest wants steak cooked to a different temperature. How would this work with the sous vide? I have an idea of what to do but I was curious what others do and if there is a better way. I am sure this question has been answered before...

What I would do is cook the most well done steaks first, then lower the temperatures, leaving the steaks in there and then add the less well done steaks next.

Example: you want 2 medium well, 1 medium rare, and 1 rare:

heat the bath to 145°F/62.8°C-cook the first two steaks. Once they are done, leave them in the bath and:

lower bath to 125°F/51.7°C-add the third steak, and cook until done. Once the third steak is finished, leave the three steaks in the bath and:

lower the bath to 120°F/48.8°C- add the last steak, cook until finished. Remove all steaks from the bath, dry off, sear and serve. Hope that helps. Good luck!

(temperatures may vary depending on the temperature guide you use. I just used the first one I pulled off the bookshelf).

I usually do what Brian suggests. Start with your highest temperature, leave that steak in the bath until it's ready, drop the temperature (you can add a bit of ice to help it drop down), add your next steak, and repeat for all levels of doneness. If you don't have a few hours for the entire process, you could get the steaks a few days before, cook them in batches whenever you've got a spare hour, chill them down, and retherm them all at the same time at the temp of your rarest steak. I usually only have to deal with 2 different levels of requested doneness so the first strategy usually works for me.

I did one batch of medium well steak at 140 F according to the joule app for slightly over an hour and I put the rest of the steak in at 130 F for another 75 minutes. My only complaint was that the medium well steak looked more medium medium rare rather than looking like the steak indicated in the app. I am not sure if anyone else has incountered this. I will probably try 145 F next time. Either way they ate the steak without complaint and all the food was ready at the same time. Thanks for the suggestions!
