My name is Siemon Spaapen and a 17 years old currently studying A levels in Malaysia. I have been involved in a certain event that will occur in February regarding a Chinese new year dinner(150 people attending). This dinner is supposedly "traditional" however, I have been given an opportunity to create a modern take on a single dish which needs to be fed to 150 people. This means that the dish will need to be sustained for at least 15 minutes as well as easy to put together in a short time frame. I would love to have some help on recipe development to create a stunning new dish that these people have never seen before. Furthermore, this course would be relatively small as there will be 7 other main (larger) courses.
A few ideas that I have come up with would perhaps be an unconventional soup (Sichuan style) which perhaps could be changed through spherification.
A steamed tofu shooter with spherified sauce placed on top of the tofu
Layers of mango and red bean suspended in a coconut water/gel
Sous vide pork belly buns with a mayonnaise foam
Theses are not any fixed ideas and I would love to hear back from u guys with any ideas or techniques that may help me in development
