Turkey Porchetta

Hi Everyone, this year I want to make a turkey porchetta with the turkey breast similar to the Serious Eats recipe http://www.seriouseats.com/2013/11/the-food-lab-turkey-porchetta-thanksgiving-recipe.html

But was wondering if it would hold up to the new CS method just posted for turkey breast of 55C for 12 - 24 hours?

It should work fine, but the breast is cooked for 8-14 hours. Legs are cooked for 24 in the CS method.
