Turkey Porchetta

Hi Everyone, this year I want to make a turkey porchetta with the turkey breast similar to the Serious Eats recipe

But was wondering if it would hold up to the new CS method just posted for turkey breast of 55C for 12 - 24 hours?

It should work fine, but the breast is cooked for 8-14 hours. Legs are cooked for 24 in the CS method.
