Roasted veg with home made caesar and Joule poached and fried veg. Made the roasted veg while I was playing. I'm a fan of the long roasted veg (6-8 hrs) and wondered if I could come close to the outcome (puree inside and caramelized outside) and speed up the process by combining a couple of techniques. So, I tried poaching a few things (parsnips, carrots, Zucs, brussel sprouts and asparagus) for 90 min with hopes of compressing some of the insides then doing a quick fry. Well, The parsnips and carrots came out really well and worth working on. The asparagus ended up more limp than a bad viagra commercial and the brussel sprouts had good flavor but wouldn't crispen up. I might be better off doing a poach and grill for some as they wold be ready to absorb the smoke flavor while they char a little (thinking out loud).
