Just got back last week from a 3 week expedition in the Brazilian Amazon. Had to try my hand ay pão de queijo. Tapioca flour makes these all chewy wonderland on the inside.

I haven't tried making these yet, but they are on my list. My Sister-in-law has made them, like a cheesy puff of air.

Lots of recipes out there, so my guess is that the proportions are quite robust. Flavor-wise I used 2:1 parm:mozz for the cheese.
