Joule Short Ribs, Part 1 - 72 Hours

72 Hour short ribs (bone out from Costco) @ 129 with mashed potatoes and Merlot reduction sauce. Great flavor. Texture more steak like than traditional braise. I filtered the sauce, so the remaining graininess comes from the Merlot (I think). I pulled a lot of scum off the wine/stock reduction prior to incorporating the remaining ingredients.

It's hard to find short ribs around here with lots of meat on them. Those look great. I've never looked for short ribs at Costco. I usually go straight to the rib-eyes. I've got to go to Costco tomorrow. I'll have to look for them. Thanks for the info and the pictures.

Red wine can be difficult to emulsify and tends to separate out especially when reduced, try adding a little butter an a gram of xanthin it should help. The ribs look awesome...and yea I know how that sauce pisses you off after the meat comes out perfect ..... next time just drink the merlot....

Thanks for the tips HC! Yeah, Like a lot of you, I just want to eat damn good food. I usually think about plating, photographing,etc after I've eaten half of it and have a Homer Simpson moment. Wine is usually involved in as well, so there's that too....
