Love my kids and am glad they like real food, but selfishly was ready to throw myself at something more challenging than steak and quinoa.

Steak, quinoa and wild rice, corn leather and roasted veg.

I've never heard of corn leather, plate looks delicious.

Corn leather was done in prep for this week's carnita dinner (I like using the leathers as wraps)

100g Caramelized corn puree (did via PC)

5g Neutral oil

5g Jalapeno vinegar

1g hot sauce

.3g xanthan gum

3g UT8

combine create thin sheet and dehydrate

NP works with any veg puree. I use it a fair bit if I want a twist for spag bowl. Use tomato leather as wraps.

Any suggestions of substitute for the Ultra Tex8? I don't have any on hand.

Do without. I did a number of ties and it works well. The UT 8 gives it a bit more flexibility but it is still fine without it.
