It's called tri-tip, from the bottom sirloin. This was a fairly small one. A buddy picked a few up from a butcher. Probably not in most grocery stores but you can find them if you look.

It's been a few years since I've cooked a tri-tip. I love'm when someone else cooks them, but I've had mixed results when I've tried. They are easy to find here in Arizona. We have a street fair here in town that has some guy grilling and smoking them on an open pit mesquite fire all day. You place your order in the morning then pick it up in the evening. For me it's the highlight of the street fair. Just happened to see some at Costco this afternoon. 2 to a pack, huge roasts, I don't recall the price. Might be time to try again.

We did 3, about a pound a piece. Seared them first with the rub in a cast iron pan, let rest, then threw them on the smoker at 250 for about an hour. If they were larger we would have probably reverse seared them after a longer smoke. These were super tender and moist, almost like prime rib. Four of us ate it all just like that with our fingers around a fire.
