Made some corn leather w/o Xanthan, or UT8 (I tend to start a recipe with some and remove a bit at a time to see what can be done without). The leather was a bit brittle, but still workable (and tasty). Filled them with carnitas and topped them with a roasted guacamole puree, caramelized onions and roasted red peppers. Served with a mole and salsa verde.
