Yup and you stuck the landing .. perfect! Did you bag and joule the potatoes? Yes right now I declare that joule can be used as a verb... hrrrrrummmphhh!

I did both a pre and a post bath sear. For the sear I used grapeseed oil in a carbon steel pan with a little bit of butter in the final sear. The temp was 144 for 3 hours.

definitely "stringy". I forgot it was there until I started cutting.

They were boiled. I was going to cook them at 150 for a couple of hours prior to cooking them, but I forgot until it was too late.
