Fried chicken

Bagged with garlic, herbs, salt and pepper. Cooked with Joule 73C for an hour. Dip in buttermilk. Toss in flour, rice flour and garlic powder. Deep fry.

Not Keller. I follow Tyler Florence on instagram (should have given him credit initially). He sometimes posts short videos that illustrate a "recipe". He says this is the recipe from his restaurant. It's not the crunchiest coating, but the chicken is tasty. I also tend to like the dark meat cooked a couple of degrees higher. Next time I'll bag and cook separately....but, overall a success!
