Croissant Dough Staging

How much can you elongate the croissant dough process if you do not have a full day to devote to the recipe? Can you freeze overnight between turns?

If you froze it overnight, you'd most likely need to let it thaw out some before working it again. Setting some time asides for this might be your best bet. If you really feel the need to make this, but cannot find time to do it all at once, you might have better luck refrigerating it, and then freezing it for the hour to work with it; unless you're going to come back to it days later, in which case freezing would probably keep it better. Unfortunately not all recipes are suited for doing a couple steps then coming back to it a day or so later.

Skip the freezer if it's only for overnight. While the dough is in the fridge, be sure to keep it well wrapped in plastic wrap so that it doesn't dry out.

I've left it in the fridge for hours in between turns with no ill effect. I think it should be fine. Just keep it in a Ziploc or something. Good luck and please report back.
