So I was on the way to the gym when a gust of wind blew me into the wine store.....While at Ed's Fine Wines Tuesday afternoon (he lets me come in and taste vendors new wines with him 4 days a week) one of my favorite wine reps comes in with tears in her eyes and Ed asked "whats wrong?". It seems she had a winemaker in from California and a wine dinner scheduled for Wednesday night, the restaurant cancelled the dinner just 30 minutes earlier. Wine maker in from California (nice wines) and no event...not good. So Ed tells her he will have a "Pop Up" wine tasting for her Wed evening....she thanks him profusely and says "I wanted so wanted food with the wines and I cant get it on short notice so I just live without it and be happy for an event". Ed looks over at me, I nod, and he says "what did you want, there's the guy". She say "I'll take anything". I asked what wine she was serving and what was her budget she told me 2 reds and 2 whites and I asked for a bottle of one of the whites and one red. Hence, the following:

pork tenderloin, brined overnight, 2%, SV 2 hours at 136F, cubed, seared and served in a pork stock/cabernet gravy
