Smoked salt could help. I also think you could get a lighter colored bacon broth by steaming the bacon and separating the fat from the liquid. You can also find bacon essential oils I believe, a couple drops could go a long way in providing aroma.

A few ways I might go about it.

You could take a cue from hainan chicken rice.

Sautee the rice in bacon fat before adding water (or bacon stock if you want to double up, though this is likely to color the rice)

You could also smoke the rice with applewood and maybe add a touch of curing salt to the rice cooking liquid...since that should cover what most people associate with bacon.

Or just smoke some ice cubes and add the applewood smoke water to the rice.

Just some ideas.
