I wanted to ask about braising.
Can I braise (beef off cuts, chicken and/or shortribs) with Joule? How does Joule react to a bag of braising liquid with meat floating in it?

You can get braise like textures using Joule, but a traditional braise is usually over the boiling point of water, which the joule cannot do. What do you mean how does it react to a bag of braising liquid with meat floating in it? Are you suggesting putting the joule in a medium other than water? Or do you mean does anything different occur if you have meat in a liquid all contained in a bag, which is then placed in a water bath?

I wouldn't use Joule in anything but (clean) water, it wasn't designed to pump and heat wine, beer or stock

I am not quite sure what you are asking but if you mean "braise" like texture, I have make
brisket
and
short ribs
that have a braise like texture.
