Large scale sous vide

Hi all,
I'm wondering about the logistics of sous vide scaled up, such as for catering. For instance, preparing 50 burgers. How long will they "keep" after sous vide? How should they be packed for transportation, etc.

You can cook and chill and last 2-3 days, or freeze for much longer. That said, burgers take so little time and the time to temp is the same, you need not cook all in advance (JMHO).

I have the small white joule. Im concerned about how many pounds of product can it handle at a time. Can it cook ten 12 oz ny strips in a half size lexan. ?
