You can Cook them a day in advance is you desire, however, i wouldn't recommend holding then at that temperature for a full day. Not that there would be a problem doing so, just would be a waste I'd electricity. About a half hour before you're ready to puree them, stick them back I. the water bath (same temp) and let them reheat. Then pass through the sieves as normal.
Andy might consider deleting the double post.

They can easily be done well in advance (mine are done and in the freezer for thanksgiving). If holding in fridge simple follow directions and store in the fridge in an airtight container. If freezing cook and sieve with butter only, then freeze. Then, when rewarm in Joule and add milk or cream stove top to finish.
