So I made a batch of Robuchon's mashed potatoes a little bit ago and got an idea. I won't be able to attempt it till sometime next month but if someone has the ingredients on hand and willing to, I'd love to hear the results.
The 2:1 ratio potatoes (I actually do about 2:3/4 for texture), but replace half the butter with coffee infused butter. Serve that with a red eye gravy and a thick pork steak. Now that would be a helluva breakfast/brunch dish.
