Brining

Hello, my name is Cesar.

I'm having a predicament. I bought a pre-brined turkey of 9.5% salt solution. However, me being impatient I didn't read the package till it was too late, I brined it with about 1 cup of salt and sugar for about 16 hours. Do you think I ruined the turkey?

One cup of salt and sugar to what proportion of water? 9.5% is pretty darn high to begin with but don't give up just yet. And to make this a tad easier to figure out, did you weigh the salt and sugar when you created your brine?

You are probably going to be ok. Now take a deep breath. Rinse it off and let it sit in same place, assuming it's at a safe temperature, in some fresh water to pull some of the extra salt out. I would let it sit the fresh water for 2-4 hours and you should be fine.

See @John_Fisher_218893 s recommendation. Soak in cold water for a few hours (changes the ionic environment-external to internal). may take a few changes of water. Lastly, when in doubt serve more wine. :-)

I know it's very late. But the turkey was actually fine and very flavorful, the one thing that was ruined was the gravy I had to use store bought because it was too salty.
