After prepping dinner for five tonight (Frenched pork roast with mustard, on caramelized onions with duck fat fingerlings, roast carrots, garlic green beans, Brussel sprouts with bacon, green salad with apple and tomato, and kale chips to snack on); separating 22 turkey thighs into meat, skin and bone; the searing and salting the 29 drumsticks was as far as I got before running off to serve dinner.
Tomorrow is only dinner for 10 so I will have plenty of time to bag the drumsticks and take them for a swim.
