Take it out and put it in a bag?

Whaaaat...
Duct tape? Eww
I'm having trouble visualizing.
Here's a tip that might work,
put the hamburger and silicone burger press in a bag and sous vide it.
Or maybe I'm not understanding what you're doing.

The silicon is a good insulator so you would have to cook for a long time. I form mine, freeze and put them in a bag. IMHO you should put it in a bag, it keeps it's shape without the use of a mold.

Noooooo! form them in the press, place them on a sheet pan and freeze them. When completely frozen sear on both sides, bag and either refreeze or cook SV immediately pictured are frozen uncooked and frozen seared, SV and re-frozen

What every body else has said....form the patties, sheet pan them and stick 'em in the freezer. Once frozen, pre sear, vac bag and cook or put them back in the freezer and use whenever.

Jose. I like the way that you are thinking about this. I would put the silicone press in a sous vide bag and cook it that way. This way you can skip the whole freezing the meat step and just put the meat in the press, whaam perfect formed burgers, and then just put the press mold, meat and all, in a sous vide bag and cook it just like that. Done, easy peezy! Great idea!
But!
But why did your burgers not cook? I am thinking that maybe the silicone insulated the meat from the heat. So I sugest you increase the cooking time by one hour, as if you started with frozen meat, and see what happens. Of course I am just guessing.
But what of the fat? Maybe you might have to drill a small hole in the silicone mold for the fat to drain out? If this is a problem?
If you made any progress please update.
Albert
