à la minute Vacum Chamber Coffee Infusion (aka Cold Brew)

I've perfected a cold brew method by infusing water (I use global A/B along with distilled water for the right TDS) with ground coffee for 40 seconds inside of my vacuum chamber. I then run the infusion through a Kalita Wave filter, the result once dialed in correctly was better than any cold brew I've ever tasted.

Great idea, but this solution isn't the prettiest method in a caffe or restaurant environment. I'd like to come up with a really great visual presentation to go along with my à la minute coffee recipe. Can someone suggest a visually compelling way to accomplish my goal? I am willing to have a vessel attached to the vacuum chamber that is custom made if necessary, whatever the job calls for, whatever it takes. Whats your idea? What would fascinate you if you were the customer watching an à la minute coffee being made?

I would want them to see that cool water boils in a vacuum. I'll never get tired of seeing that. How about something like a French coffe press shorter so it would fit in the chamber vacuum?

A side-arm Erlenmeyer flask as your infusing vessel, perhaps?

I want the visual experience to occur outside of the chamber. Seder's Erlenmeyer flask suggestion is what I had in mind, but then I still need to figure out (1) How to create the vacuum within the flask (2) how to filter the extraction so it is a visually compelling experience for the customer.

1a) Some vacuum chamber sealers have an external vacuum port. I suppose yours doesn't...

1b) Get a dedicated vacuum pump for infusing your coffee. Oil pumps are relatively cheap, definitely much cheaper than a chamber vac with external port, but all precautions to boiling liquids and oil pumps apply.

1c) DIY, if you are so inclined. Vacuum chamber sealers are really rather simple devices, a bit of vacuum tubing, a couple of hose fittings and adapters and a three-way ball valve are all the parts you need to equip one with an external vacuum port. Of course, this will void warrany and perhaps go against regulations.

2) Good luck with that. I don't do coffee, but regularly let various liquids, mostly juices, drip through a coffee filter. Booooring

Or check out bell jar style vacuum chambers from Nalgene. They don't scream "I came from a chemistry lab!" as loud as Erlenmeyers, they are easier to clean, because you can use any wide mouth glas container, cup, mug, beaker, whatever for the vacuum infusion, and the vacuum tubing attaches to the base, so you can route the tubing out of sight.

Thank you, this is exactly what I was looking for! Perhaps I can use an attractive serving vessel inside of a bell jar, and then decant (filter) via Chemex. I will investigate. Thanks!

French press filters are sub par for the experience we are after, the mouthfeel provided its right. But its certainly a worthy suggestion!
