If you ever do, go with Nova Scotian South Shore Lobster. By far, the best in the world. The powerful tides in the Bay of Fundy pull huge quantities of nutrients in to the waters off Yarmouth and the South Shore, creating a rich, fertile feeding ground and the colder waters from being a little further north then Maine make for meat that is all the meatier, plumper and sweeter.

CS Gang, a Lobster How-To w. Joule would be great for a News Years celabraish. Surf&Turf maybe? Cook the steaks, lower the temp, cook the lobster? You're the pros, just a suggestion for a new sous vide lover. The Joule was absolutely worth the wait!!
