While I cannot comment about lamb or beef, I've had no issues doing that with pork and chicken.

I have done it with Lamb, beef, pork and chicken. Depending on the type of marinade (a consideration) it can work. More acidic marinades will continue to break things down so there's a window where it becomes pasty. Cooking it n a stock-style sauce (e.g. bordelaise) this does not have that marked decomposition of proteins.

Ive done it with steak and chicken and it comes out fine. I have only done it for two hours at most though. As Todd said you don't want to over do it and make it too soft.
