Steamed Buns recipe use

For the steamed buns recipe. Can I make the dough, proof it, punch the buns and than put it the refrigerator to later on steam it?

I usually make the buns, cook them and then freeze. when I want to eat them I place the frozen buns directly in the steamer for 5/10 minutes... it worked very well for me! I've tried to freeze them raw...

. I needed to stagger the work as I had quite a bit of stuff to do. I made the buns the Friday, I cooked them, freeze them on a tray, The Saturday just before serving, I steamed the buns straight out of the freezer. It worked well, that said, I was wondering if the time in the freezer didn't make them a bit denser than when they are just been made. I tasted one the Friday to make sure they were good and I thought they were a bit fluffier when they were fresh.

Me too, I still have some in the freezer from last time. Cooked, cooled and then froze....still good but as you said not quite as good as fresh.
