I wanted to create a burger with typical Dutch flavors. Ended up with (bottom-up)
Sautéed kale (cavolo nero), mixed with grated, very old Dutch cheese ("brokkelkaas")
Pickled red onions
56C black angus patties with a bit of Dijon mustard on top
Bacon, glaced with typical dutch syrup ("stroop") and liquid smoke
Worked very well, nice balance of sweet, salt, bitter, sour and umami.
Served with Heston's roasted potatoes (awesome) and BBQ baked beans, paired with a nice IPA. A hearty winter-meal
