Whoa... I've been eyeing this recipe for a while too... questioning whether I should use beef-ribs or brisket, whether I can get away w/o first cold-smoke, etc... That looks awesome.

I think the short ribs makes more sense for cooking sous vide. If you were going to make pastrami the traditional way, I feel like the fat cap on top makes it baste itself in the smoker. But since we're sous viding, the more even marbling of short ribs makes a better eating experience. Actually...idk. I feel like more even marbling is always better what am I talking about LOL
