Has anyone ever used the joule to cook a beef or wild game heart? I am wondering what the time/temp combo should be?

I cooked pork heart at 62c for 24 hours, seared and sliced thin. It was delicious, but I'd go a bit lower next time. There wasn't much info on pork heart, so I was playing it safe with temp. I'd maybe go 58 on the next one.

Yes! I have done deer heart and it was amazing. I did 60*C for 32 hours (I just picked a random time that was convenient and more than 24 hours). All of that collagen just melted into gelatin.

I did beef heart 8 hrs 131f/55c. Also brined.
