I was checking out Kenji's website and these really looked good. So I had to try them tonight. I am adding these to my go to potato list, crispy on the outside and fluffy in the inside.

I used olive oil, and only garlic...rosemary isn't one of my favorites so I didn't have any. Finished by putting the fried garlic, some parsley and chives. Took most of an hour in the oven but so worth it. The real trick to them is the 1/2 tsp of baking soda in the par-cooking water.

John, try the modified hestons. Preheat oven to 400-425 and place a roasting pan or large cast iron pan with ~1/4 inch of oil or duck fat in the oven to heat while oven is preheating. Blanch the potatoes in the same way you would using the CS thick french fry brine (a few minutes longer bc chunks are thick), then drain in a collander and shake them a little to create the edges. Then place in vacuum chamber and pull vacuum once or twice (same as fries), then roast for ~50-60 min turning every 20 min or so. Then add garlic, or thyme etc and turn and into oven for ten more minutes. I recall Chris outlining this a couple years ago. They are awesome!

This is such a solid technique - par boil with baking soda. It is how I do home fries for bacon and eggs every week (smaller dice). Definitely worth the minimal extra effort, and over the years I've found efficiencies in baking off the bacon in the oven while the oven preheats so I can toss the taters in rendered bacon fat before they go in the oven!

Thanks, I didn't think about putting them in the vacuum chamber to dry them off, that would help them brown better/faster.

I also use Heston's technique but without the vacuum chamber step. I just let them cool down before roasting them to get rid of moisture. Best roast potatoes ever!!

Now I am thinking of using a combination of both techniques to make thick cut oven fries. I had almost forgotten the technique to find the best potatoes for frying until I looked at the CS fry recipe again.

JF, those look fantastic! I saw Kenji's article and video as well and these are at the top of my list for new potato dishes!

I made this with russet yesterday and sweet potatoes today. Oh my! I think I owe you an apology---I distinctly remember thinking "really? Potatoes? Potatoes are potatoes". So, apologies for my doubt and thank you for this link😋
