Am planning on using sous vide to cook the chops. Do I use the same temperature and time as I would for beef?

I prefer my beef, depending on the cut, medium rare or slightly shy of that. So I cook veal a little bit higher, maybe 3 to 6 degrees over beef temps, so medium rare plus a bit.

May I ask why? Is it just a matter of taste or is the texture of the meat different

For me it's texture thing. I'll happily eat veal that's medium rare, but if I'm cooking it I go just a little bit more done.
