The Sous Vide Cooking Guide identifies “Tough Cuts” for beef, and singles them out for extra long time. Do you know which lamb cuts might be considered “Tough Cuts” for lamb? Unfortunately I can’t eat beef these days. I dream of eating a ribeye again. Hell, even a Big Mac, but that’s out of the question as well. But lamb is not a problem. Go figure. So me and Costco--we have a great one near me--and lamb it is.

I tend to go with 54-57C, Costco has lab chops, leg of lamb and lamb rack, right?
I think the leg of lamb is the tougher one, that on I usually split into 3-4 pieces, easier for 3 people and then do those around 4-6h depending on planning. Works out well, the rack doesn't need a ton of time, 3-4h.

Honestly, it should be about the same beef to lamb. If you're unsure, you could most likely look it up online, or ask one of the butchers.
