Getting ready for a dinner event NYE (working will keep me sober ;-)..). I've only got 2 siphons at the moment and I know how much many like the nitro poached margarita, so I modified the aerated apple sorbet to make an aerated citrus margarita. using some dry ice to chill the mason jars and siphon allowed me to do it in under 4 hours. My plan is to use time to my advantage and let it freeze over night but the alcohol may inhibit the final result so will probably use the DI the last couple of hours to firm up.
