Oxtail and celeriac Puree

100hr oxtail (reheated from frozen) with red wine glaze and celeriac puree and roasted veg finished with manni olive oil (just arrived, second time I've bought it and it's my fav).

Do you cook the celery root in milk? I've cooked it several times using both water and milk..... curious as to your preparation.

Sometimes cream, sometimes almond cream (If I'm in the mood for the whole dairy fee thing). I infuse the cream with horseradish first (min 4 hours, usually over night), add salt and an acid, lemon juice per CS, or pear vinegar.
